
hot smoked salmon & potato salad
This tasty recipe idea features our German Potato, Egg & Bacon salad; a delicious combination of free range eggs, potato wedges, and bacon in a premium creamy mayonnaise. This salad is available in our deli range and also 300g pre-pack range. It is perfect for summer entertaining. Try it on its own or in this delicious recipe:

INGREDIENTS:
600g | German Potato, Egg & Bacon salad |
300g | Hot smoked salmon |
2 tbs | Capers |
2 tbs | Cornichons, halved lengthways |
1 | Lemon, zest and juice |
1 packet | Gourmet mixed leaves |
1 bunch | Dill or parsley |
1 tbs | Olive oil |
Salt and pepper – to taste |
METHOD:
- In a clean bowl, gently flake bite size pieces of salmon.
- Roughly chop the bunch of herbs (leaves only) and add half to salmon.
- Add zest and juice of one lemon and olive oil to the flaked salmon.
- Using a spoon, gently coat the salmon in liquid and herbs.
- Arrange some mixed leaves on a large serving platter and add spoonfuls of Potato, Bacon and Mustard Seed Salad.
- Gently add smoked salmon, capers and cornichons.
- Top with remaining leaves, fresh herbs and any remaining lemon/oil dressing from salmon.
- Serve, and enjoy!
